Piedmont Custom Meats does not use any spice blends containing USDA recognized allergens, Nitrates or Nitrites except those that naturally occur in a natural ingredient.
Piedmont offers Uncured Bologna using meat from your animals. Our recipe contains: Sea Salt, Spices, Evaporated Cane Syrup, Paprika, Cherry Powder (Cherry Powder, Evaporated Cane Syrup), Onion Powder, Natural Flavor (Celery Powder, Sea Salt). No nitrates/nitrites added (only those naturally occurring).
We can make the following and it can be sliced or made into approximately 1 pound chunks:
Salt, Spices (including Red, Black and White Pepper), Sugar, Onion Powder, Garlic Powder and less than 2% Tricalcium Phosphate added as an Anti-caking Agent, Smoke Flavor (Dextrose & Natural Hickory)

Wondering what to do with that extra pork or beef fat? Want to maximize profit and use every part of your animal?
Consider letting us render your pork fat for "lard" and/or beef fat for "tallow." All rendered fat is packaged in 32oz plastic containers.
We need approximately 200 pounds (green wt) of fat to create your "white" value-added lard or tallow.
